My first Go at nixtamalization.
Nixtamalization is a fancy word that means cooking corn (in this case) in a super alkaline substance.
Why would anyone do this?!?
Because corn contains nutrients that lock the B vitamins and other nutrients in the kernel. When you eat corn in this modern way, you create significant nutrient deficiencies and gut issues.
Nixtamal is nature’s way of unlocking the nutrients in corn.
I used wood ash as my nixtamal agent (most ppl don’t get this Primal, but you know how I roll😉🌽). Which gave the tortillas an amazing smoky accent.
You better believe these will be on our Sunday Farm Bruch menu this summer at Ojo Conejo🙌🏼
