When it comes to diet, we tend to have the mindset that we should avoid carbs and sugars to attain our health goals. Utilizing Healthy Carbohydrates, Point #1: Light environment plays a crucial role in how we process and digest carbohydrates
One of the biggest missing areas that Paleo and Keto diets fail to address is the light environment when it comes to carbohydrates and sugars. This factor can make or break your healing potential and how you process these types of foods. Having an understanding that your light environment has a direct impact on how you metabolize these foods is critical. When you live in a poorly lit environment such as artificial light or incandescent light bulbs, this drives our inability to process and digest carbohydrates and sugars.
Since 1879 when Edison made incandescent bulbs, our lifestyle shifted from outdoor to indoor based. Over time, as we have shifted to a more indoor based lifestyle, this has driven a huge inability to how we process carbs and sugars. I want you to be aware of the differences between the light environment of indoor vs. outdoor. When you are outside, you are under the power density of the sun, there are different light spectrums you are exposed to throughout the day that drive your metabolism. When you are inside, you predominantly expose yourself to blue and green light, this is an artificial light environment. When you are constantly in front of your technology devices, or working and living under these light conditions, it has a huge impact on your metabolic health, hormone health, as well as the ability to metabolize carbohydrates and sugars effectively.

Utilizing Healthy Carbohydrates, Point #2: When your food is turned into energy, it’s not detected just as fats, proteins, and carbohydrates. The food is also broken down into a more anatomical level involving protons and electrons.
On a surface level, we think of foods broken down into fats, proteins, and carbohydrates. We have to dive deeper, when your food is turned into energy it is being broken down on a deeper anatomical level including electrons and protons. Electrons and protons carry a light blueprint within them. For those of you familiar with your mitochondria, this is the energy warehouse of your body. I refer to the mitochondria as asking yourself if your battery is running on a fully charged mode or is your battery running low? The mitochondria is a huge area in which you produce your energy, the way you produce energy is with those electrons and protons with an end goal of energy oxygen and water. To do so, electrons and protons have to go across 5 train stops, referred to as cytochromes. As soon as you’re ready to turn that food into fuel, those electrons and protons go across those 5 proteins in your mitochondria.
This goes to cytochrome 1, 2, 3, and so on. As these electrons and protons move across your mitochondria, this allows you to produce energy, oxygen, and water. This is your key to health, the better you can do that, the healthier you will be. If you can do those three things super efficiently, you will age very gracefully and lead a longer life. For example, if you have a bowl of berries, these get broken down into electrons and protons, and they’re ready to make their journey on your mitochondria.
The carbohydrates enter the electron transport at NAD NADH, the first cytochrome, but if this cytochrome is not in good shape, you will not digest the processed carbohydrates in an effective way. You ultimately end up compromising your ability to produce energy, oxygen, and water. Those components of electrons and protons in the carbohydrates you ate will over time develop a pathology state. This is a state where you gain weight, compromise your hormones, gain susceptibility to cancer, and more.
Utilizing Healthy Carbohydrates, Point #3: We look to diet to rectify metabolic disorders, however, diet is a band-aid approach to rectifying these issues.
When we notice our metabolism is off, whether we are gaining weight, struggling with cancer, or obesity, these are key signs our metabolism is not functioning optimally. The mistake we’ve made around approaching metabolic disorders is simply looking at diet as a means to rectify these issues. Diet is somewhat a band-aid approach when it comes to rectifying these issues because we are not looking at what drives your ability to process carbs and your ability to have a healthy metabolism or hormone function.
We can look at a ketogenic diet to help with these issues as it’s low in carbohydrates. When you remove carbs from your diet, you bypass cytochrome 1, also known as NAD NADH. If your diet is predominantly fats and proteins, these enter the electron chain at cytochrome 2, and you bypass a broken system. This is why some people have success with a ketogenic diet. It’s because the first stop is broken but the rest are working optimally. It’s great to have healing breakthroughs from a dietary shift, however, if we want to get to the root of why you have that issue with cancer, or you’re susceptible to diabetes, we want to repair a broken or faulty NAD NADH to improve our carbohydrate metabolism.
If you do not repair your NAD NADH function, anytime you divert from a ketogenic diet, your symptoms will come back. Any time we follow a diet or supplement protocol strictly and fall off that regime, all our symptoms come back. I consider this partial suppression and a band-aid approach. The diet is doing awesome things but to get to the root of the issue as to why so many of us today struggle with carbohydrate metabolism, we need to repair the broken engines at cytochrome 1, NAD NADH.

Utilizing Healthy Carbohydrates, Point #4: Cytochrome 1 (NAD NADH) needs UV light to function optimally.
In order to repair our cytochrome, let’s explore how that becomes damaged in the first place. Cytochrome 1 is a protein designed to interact with UV light, there is a molecular structure designed to function when you’re exposed to UV light. NAD NADH needs UV light to function optimally. This also produces melatonin. Most people struggle with adequate melatonin release. We have to look at the other side of melatonin, while it’s released during the night, it’s recycled and replenished in a strong UV light environment.
If you are not going out in the sunlight during the day, you are not recycling and replenishing melatonin levels. This is why people with cancer, type 2 diabetes, and obesity often have low melatonin and vitamin D levels. When you start to correct your light environment, this is key to helping transform the way your body handles carbohydrates. When you are in UV light, now you repair the broken engines at cytochrome 1, while replenishing the melatonin source. This is key for your body’s ability to handle carbohydrates. When you know this information and inner workings of your physiology when it comes to metabolism, now you will start to see how long-term diets could be a band-aid approach to health.
The Bottom Line of The Immune System: What It Is & How It Works to Protect You
If you’re someone out there and you find yourself craving carbohydrates and sugar often, I suggest that you practice and implement the things we talked about in this episode. Know that you gain energy from your environment and that your skin is designed to attain energy from your environment. This is key to improving carbohydrate metabolism, energy levels, and rectifying those carbohydrate and sugar cravings.
